1. General
This manual is an integral part of the machine and should remain with it throughout its working life. Read the instructions thoroughly before commissioning the mixer, particularly the safety information.
The manufacturer may update the product manual without updating an individual printed copy. Contact the supplier if a fault occurs.
Unpacking
Unpack the machine and dispose of packaging in accordance with local regulations. Before removing the machine from the pallet, verify that the ordered parts are present.
- Safety guard, filling chute and bowl.
- Grease gun, rubber feet and height-adjustment spacers.
- When selected: bowl trolley, whip, beater, hook, scraper with blade and attachment drive.

2. Safety
The machine may only be used, cleaned and maintained by trained personnel over 14 years of age, subject to applicable local laws and regulations. It is intended for commercial use in kitchens, catering outlets and bakeries and must not be used in an explosive atmosphere.
Risk of injury
Never place fingers in the bowl while the mixer is running. Electrical connection must be carried out by a certified electrician. Use lifting equipment when moving the machine, keep it upright, and do not pull or lift it by the bowl-lift or speed-selection handles.
2.1 Magnets and implants
The mixer and safety guard use strong magnets. Users with implants such as pacemakers or defibrillators must observe the warning information and the indicated magnet locations.
2.2 Powdery ingredients
- Do not pour powder into the bowl from a great height.
- Open bags such as flour bags at the bottom while positioned in the bowl.
- Do not increase to maximum speed too quickly.

3. Installation
Provide sufficient space for normal operation and maintenance. The floor and work area must be firm, even and level. Install the supplied rubber feet; use spacers under the feet where necessary. The ambient temperature must not exceed 45 °C.
3.1 Connection to power
Connect the mixer using a plug rated for at least 16 A, 230/400 V~, IP44. Before connection, verify that the voltage and frequency on the machine label match the installation supply.
- 1 phase with neutral and earth: 3-pole plug.
- 2 phases and earth: 3-pole plug.
- 3 phases and earth: 4-pole plug.
- 3 phases with neutral and earth: 5-pole plug.
3.2 Checking planetary-head rotation
Remove any mounted tool, raise the bowl to its normal working position and start the mixer. The planetary head must rotate in the direction indicated by the arrow above it. If rotation is incorrect, a certified electrician must invert two phase conductors in the connection cable.

4. General cleaning requirements
Disconnect before cleaning
Cleaning may only be performed by trained personnel. Disconnect the connection cable from the power supply before cleaning. Never rinse the machine using a hose.
The plastic safety screen may be damaged by prolonged high temperatures. The source manual states a general maximum of 60 °C and a rinse maximum of 90 °C for no more than 30 seconds.
5. Working with hot ingredients
When ingredients are added through the filling opening, use the food-grade silicone filling chute for ingredients up to 200 °C. Without the filling chute, ingredients added through the opening must not exceed 60 °C.

6. Maximum mixer capacity
Do not exceed the listed capacity. Ingredient properties, water absorption, volume and baking characteristics can affect practical capacity.

Absorption ratio (AR)
AR expresses liquid as a percentage of solids. Example: 0.6 kg liquid and 1 kg solids gives 60% AR.
7. Correct use of tools
For mashed potatoes, use the special wing whip or a whip with thicker wires; alternatively use the beater and whip. Do not strike whips against the bowl edge or other hard objects.

8. Operating the mixer
Avoid overload
Use the correct tool and recommended speed. Cut large pieces of fat or chilled ingredients into smaller pieces before placing them in the bowl. Prolonged overload may activate motor protection.
8.1 Controls
The front panel contains the timer, time-up and time-down buttons, Start/Stop (pause), and the emergency stop. The emergency stop is intended for emergency situations and for powering off the mixer, not normal stopping.
8.2 Before starting
- Place the tool in the bowl.
- Place the bowl in the bowl arms.
- Fit the rear safety-guard section.
- Lock the tool into the bayonet fitting.
- Raise the bowl to working position.
- Fit the front safety-guard section.
- Set a running time when required.
Start at the lowest speed and change speed only while the mixer is running. Before stopping, return the speed selector to the lowest speed.

9. Maintenance and lubrication
Service-level procedure
Before repair or adjustment, disconnect the power cable. The source manual specifies lubrication of the infinitely variable gear approximately every 60 operating hours using the supplied grease gun and the specified grease.
Lubricate the movable parts of the bowl arms, shaft and lifting rod with oil. The specified grease for pulley-set shafts is TOTAL MULTIS XHV 2. Other assemblies have separate grease requirements stated in the source manual.

10. Mechanical adjustments
The source manual includes technician procedures for the special V-belt, speed, bowl fixing, bowl centring and bowl height. These should be published only after service-department review and may be better suited to a restricted technical knowledge area.


11. Troubleshooting and error codes

OL - Motor protection has stopped the machine due to overload. Allow it to cool. If normal mode does not return, the relay requires manual reset.EE1 - Bowl not in the correct position. Place it in the cradle and raise it to working position.EE2 - Safety screen not fitted or closed correctly.EE6 - Start relay has not activated correctly. Contact a technician.
12. Manual reset of the motor protection relay
Qualified service personnel only
This procedure requires removal of covers and the control panel. Disconnect power before access and obtain approval of the reconstructed wording from Varimixer Service before publication.
The relay is behind the control panel inside the black cover box. The source procedure instructs the technician to remove power, remove the top cover, unplug the control-panel cables, remove the control panel and cover box, press the red reset button, and reassemble in reverse order.

13. Principle electrical diagrams
Electrical schematics should remain as high-resolution figures or downloadable controlled documents. Linear PDF text extraction does not preserve wiring relationships.


14. Detailed cleaning guide
The mixer components are mainly stainless steel EN 1.4301 (AISI 304). The source guide specifies chloride content below 50 ppm at temperatures up to 80 °C, avoidance of hard steel wool or scratching objects, and rinsing with clean drinking-quality water after chemical use.
Aluminium components
The bowl ring and certain tools are aluminium. The specified pH range for washing aluminium is 5.0 to 8.0.
Cleaning sequence
- Bowl: Empty and rinse; clean by hand or dishwasher. Remember that the bowl ring is aluminium.
- Tools: Remove food residue and rinse. Wash by hand or dishwasher. Remove the stainless-steel part of the scraper blade before cleaning.
- Safety guards: Wash by hand or dishwasher.
- Bayonet housing: Inspect for residue and clean with a damp cloth or sponge.
- Front panel: Wipe with a lightly wrung cloth, including the emergency stop.
- Mixer and stand: Clean with the bowl-clamping system in both open and closed positions.
IP32 machines must only be wiped using a well-wrung damp cloth. The source states that upgraded IP44 machines may be foam-washed, with rinsing restricted to thin streams equivalent to normal rain.


15. Compliance documentation
The source contains the multilingual contents of the Declaration of Conformity and references the Machinery Directive 2006/42/EC, other EU legislation and harmonised standards. The controlled declaration should remain available as a downloadable original document rather than being replaced by this web reconstruction.
